In January, Lakeside Bakery (formerly Canfora) abruptly closed its doors at 1100 E. Oklahoma Ave. in the Bay View neighborhood.

But the former bakery won’t be empty for long.

Brittany Wohlfeil and Kasey Gusho, owners of Menomonee Falls bakery Batter & Mac, N89 W16750 Appleton Ave., have signed a lease on the property with the hope of opening a second Batter & Mac location sometime this fall.

The two sisters, who opened their brick-and-mortar bakery business in Menomonee Falls in 2021, have built an inclusive, welcoming bakery that is as much a community gathering place as it is a destination for macarons, pastries and cakes. [Read more here]

Based on the success they’ve seen, they knew they wanted to establish a second location for the bakery. But they didn’t anticipate doing so for another three or four years. But that changed when they got a call from Tom Block, who had purchased the Lakeside Bakery building with his wife, Kristin, in July of 2024. 

“The building needs some upgrades to bring it up to code,” says Wohlfiel. “But it’s an opportunity that we can’t pass up. The bakery itself has the space and equipment we need to expand our offerings, and it will give us the chance to to pursue wholesale opportunities that we’ve had to turn down in the past.”

What to expect

Wohlfiel says customers can expect the bakery to offer signature items including cakes and macarons along with breakfast sandwiches, espresso drinks, doughnuts and breakfast pastries. 

And yes, they will also offer Badger Ham with housemade rolls on Sundays, along with add-ons like potato salad, coleslaw and sliced cheeses.

Thanks to the larger kitchen and expansive deck ovens, they also hope to expand their selection of bread offerings. 

In the coming days, Gusho and Wohlfeil will be starting on making necessary improvements to the bakery. Some, like repainting, are cosmetic. Others, including replacing flooring, are needed to bring the kitchen up to code. Provided all permits can be obtained and inspections passed, their hope is to open new bakery as soon as October.

“We’re excited to join the community and carry on the tradition of keeping a bakery open in that location,” she says. “We hope that people will embrace what we do and the new things that we’re bringing to the neighborhood. Our goal is to honor some of the long-held traditions that Lakeside and Canfora Bakeries started while also incorporating new offerings and working to create new community traditions.”

Once open, Batter & Mac in Bay View will likely adhere to similar hours as their Menomonee Falls location, which is open Wednesday through Friday from 7 a.m. to 4 p.m. and Saturday and Sunday from 8 a.m. to 2 p.m
