Fresh off the announcement of its name change, the Lowlands Group has introduced Chef David Spirito as its new culinary director.
Spirito is no stranger to the multi-restaurant concept, having piloted the kitchens for the Texas-based Sherlock’s Baker St. Pub & Grill, Watson’s House of Ales and Dew Drop Inn restaurants managed by Hospitality USA.
With his new menu already in place at Trocadero, Spirito is currently at work creating the menu for Café Benelux, which is scheduled to open at 346 N. Broadway in the Historic Third Ward in April.
In addition to Trocadero and the upcoming Café Benelux, the Lowlands Group also owns and operates Café Centraal in Bay View and the Café Hollander locations on Downer Avenue and in the Tosa Village.
