It’s almost time for the Wisconsin State Fair, which runs July 31 through Aug. 10. And — just in case you needed another reason to be excited — the Fair has dropped the list of 96 brand-new gut-busting goodies you’ll find on the grounds this year.
So, what’s trending?
Following in the footsteps of TikTok’s viral Dubai chocolate obsession, you’ll find no fewer than five takes on the crisp, nutty pistachio-filled treat: the Dubai Chocolate Bar; Dubai Chocolate Cookie; Dubai Chocolate Strawberry Smoothie; Dubai Funnel Cake and a Sea Salt Caramel Dubai Cup. It's a dessert empire in the making.
In general, the Fair continues to be a playground for over-the-top indulgent sweets, especially the ones that fuse two or more nostalgic favorites into one outrageous bite. That includes options like:
- Deep Fried Tequila Donut Shots
- Hot Honey Jalapeño Popper Donuts
- Peanut Butter Fluff Quesadillas
- InCURDable Apple Pie
There’s also a clear uptick in spicy and "Flamin’ Hot" everything. Whether they deliver real heat is up for debate, but we’ve got:

- Hot Honey Jalapeño Popper Donut

As usual, every single one of these new foods is fair game (pun intended) for my annual State Fair food tasting and review extravaganza, during which I eat far too many ridiculous foods and report back with the good, the bad, and the deeply regrettable.
