Margaux is the name of a brand new concept coming to the Corners of Brookfield which aims to bring forth the alluring bustle of a Parisian brasserie in a bold, new, modern eatery.

The restaurant, which is expected to open one block east of the entrance to Von Maur in late 2023 or early 2024,  is the first original concept to be launched by Kristyn Eitel since she took on majority ownership of both the BelAir Cantina and Fuel Café brands last fall.

Eitel says that Margaux will encapsulate some of her favorite aspects of the hospitality industry, many of which she's gleaned over the course of her 30 year industry career, as well as elements that still inspire her.

“I want to weave the best of French cuisine into a modern, sophisticated concept,” she says. “I want the setting to be cosmopolitan, yet relaxed; and I want to let the food and drink inspire great experiences.”

While the finer details of the concept are still under wraps, Eitel says Margaux is a culmination of years of travel, exploration and memorable moments relishing fine food. In fact, it’s based on an idea which she says she has been refining for years, and which she now feels prepared and compelled to share with diners in the Milwaukee metropolitan area.

Ultimately, she says, she wants Margaux to be the restaurant which prompts guests to fall in love with dining out all over again.

“We have had a great partnership with Kristyn since opening in 2017. The hugely popular Belair Cantina has been rewarding for the Corners and more importantly our customers, making a significant impact to our culture, the vibrant atmosphere of Market Square and the Town Center,” said Robert Gould CEO of The Corners.

“Bringing a French Brasserie concept to the Corners is something that Kristyn has been working on with us for a long time. Given the European style of our Market Square, it simply had to be located there. I am confident that with Kristyn’s experience and understanding of the market, it will be well executed and another win, win for our customers.”

Additional information regarding the Margaux concept is expected to be shared soon.

Margaux will mark the second restaurant at the Corners of Brookfield for Eitel, who opened BelAir Cantina at The Corners in 2017.  The concept will join a varied group of eateries including Café Hollander, Freshfin, Grimaldi's Pizzeria, Goddess & the Baker, Here Chicky Chicky and Wahlburgers. Sweet Green is also expected to open in the months ahead.
