This month, Potawatomi Casino Hotel invites guests to savor Wisconsin in the most luxurious way possible: Gather & Grow, a two-night-only farm-to-table pop-up that pairs elevated dining with the rich stories of local farmers and makers.
The five-course dinner will be held Sept. 22 and 23 at 6 p.m. in the Serenity Room on the hotel’s third floor. Tickets are $80 per person or $120 with curated beverage pairings.
Five courses, countless stories
Your night begins on the Serenity Room’s rooftop deck, a hidden gem overlooking the Milwaukee skyline. With a Garden Collins cocktail in hand and a spread of Wisconsin cheeses, charcuterie and bruschetta to graze, the stage is set for a meal that’s as intimate as it is unforgettable.
Every dish on the Gather & Grow menu is anchored in ingredients sourced from independent Wisconsin farms, fisheries and producers. It’s an edible journey through the landscapes and traditions that define the state.
On the menu, you'll find:
- Uphoff Farm Pork Belly Confit draped in a bourbon barrel-aged maple glaze from Mushroom Mike, paired with Odyssea Sangria.
- Ney’s Chicken and Wild Rice Soup enriched with foraged mushroom broth, paired with Third Space Brewing’s Pretty Good Amber Ale.
- Red Cliff Fish Co. Pan-Seared Whitefish brightened with salsa verde and braised Swiss chard, paired with Wollersheim Prairie Fumé.
- Wisconsin Meadows Red Wine-Braised Beef Cheeks with smoked pickled pearl onions and creamy polenta, elevated with a Porcini Manhattan crafted from Copper Crow whiskey.
- Kickapoo Orchard Apple Spice, an artful mousse-based dessert featuring caramelized apples, spice cake and Biscoff crumble, served with a Harvest Brûlée cocktail (pictured above).
Each pairing is thoughtfully chosen, weaving together the craftsmanship of Wisconsin distilleries, wineries and breweries to complement the flavors of the farms.
