Ready To Roll, a mother-daughter partnership specializing in handcrafted egg rolls is slated to host its grand opening at Crossroads Collective, 2238 N. Farwell Ave., on Friday, Nov. 10.

Behind the business are Shatoia and Sandra Robinson, who’ve combined their talents and passion to bring people together through food. 

Shatoia says she found her passion for food and community at an early age while working alongside her grandmother in the kitchen. While living and working in Chicago, that passion grew, leading her to launch a food truck, Mama Green’s Gourmet Goodies, an experience that ultimately gave her the tools she needed to return home and eventually launch Ready to Roll.

Meanwhile, Shatoia’s mother Sandra spent over four decades building community through her work in media, including roles as general manager for WNOV 860AM/106.5 FM and chief financial officer for Courier Communications. She contributes to the partnership through her finely tuned skills in storytelling and a knack for making connections.

“Our restaurant story is a fusion of my mother’s radio expertise and my hands-on experience as a former food truck owner,” says Shatoia. “It’s the perfect fusion of our strengths, allowing us to craft exceptional egg rolls while sharing stories that resonate with our community.”

On the menu, guests will find five uniquely filled eggrolls including:

  • Vegan Italian Beef: an egg roll which aims to capture the essence of the classic Chicago sandwich in plant-based form
  • Vegan Mongolian Beef and Broccoli: a delicious plant-based take on the comforting Asian dish
  • Chicken Philly: a contemporary take on the traditional cheesesteak sandwich
  • Buffalo Chicken: the classic spicy, savory flavors wrapped up in an eggroll
  • Collard Green: an eggroll that celebrates Southern influence with its filling of garlicky collard greens, turnip greens and kale.

In addition to a desire to connect people from various backgrounds through the power of food, the mother-daughter team is also committed to actively seeking out local partnerships, strengthening the local economy and building ties to the community.

“Our commitment to local sourcing isn’t just about quality,” Shatoia notes. “It’s a deliberate choice to support our neighbors.”

In the same way, they see the atmosphere at Crossroads Collective as a space that aligns with their vision of creating a dynamic culinary hub on the East Side.

“It’s not just about having a space,” Shatoia notes. “It’s about being part of a thriving local scene where unique flavors and stories converge.”
