Friday, Feb. 24 marked the last day of service for Sully’s Sandwiches, the West Side sandwich shop which opened last February at 9211 W. Center St.
“At the time we opened, it was a really exciting thing,” notes owner Molly Sullivan, who also operates Miss Molly’s Cafe & Pastry Shop, 9201 W. Center St.
“I still believe in the concept. We made great food and served it in a great space. And – over the past year – we had developed a following that appreciated what we offered.”
But Sullivan says that, as she began to evaluate the two businesses and envision their futures, it made more sense to reinvest in Miss Molly’s Cafe, than to continue to operate two separate concepts. “We could have kept Sully’s open and continued to operate as we have,” she says. “But this is a much better decision overall.”
Reinvesting in Miss Molly's
Sullivan says the first change will be to shift bakery and catering operations over to the Sully’s kitchen.
“The cafe kitchen is so small, and as our business has doubled in size over the years, we’ve outgrown the space. Having a dedicated kitchen for our bakery will allow us to expand our offerings and give customers what they’ve been asking for, including items like croissants and cinnamon rolls.”
Sullivan says the additional kitchen space will also allow them to build on the catering services they offer.
Sullivan says that they will begin rolling out changes at Miss Molly’s later this spring. In addition to new baked goods and an expanded catering menu, folks can look forward to the return of hours on Tuesdays, as well as early morning hours.
While letting go of a business is never easy, Sullivan says that this decision simply makes the most sense for her, her employees and her family.
“I don’t think we really realized how much people really loved Miss Molly’s,” Sullivan says. “But we really have a great following, and the cafe has become a staple in the neighborhood. So we are excited to double down and make it even better.”
Sullivan says that any remaining gift cards from Sully’s Sandwiches can be redeemed at Miss Molly’s Cafe & Pastry Shop.
