Way back in January, we gave you a little bit of a tease, letting you know that Outlaw Oyster, a seafood-based pop-up was coming to the space at 6517 W. North Ave. in Wauwatosa, just East of Crafty Cow.

But now, following a series of soft openings and a launch party last week, the concept is preparing to open its doors to the public for the first time on Wednesday, Feb. 12.  And we’re here to tell you everything you need to know before you go!

First of all, it might feel anti-intuitive, but you’ll want to enter through Crafty Cow’s Tosa’s main entrance at 6519 W. North Ave. Just let the staff at the host station know that you’re there for the pop-up and someone will lead you to your seat in the Outlaw Oyster space.

From there, it’s all about diving in and enjoying the slate of “Northeast meets North Woods” menu, which showcases delicacies ranging from freshly shucked oysters and tinned fish to hearty sandwiches.  

Here were some of our favorite dishes from the soft opening!

1. Pimento Cheese Ball

This is precisely what it promises to be: Southern style pimento cheese rolled into a Wisconsin-style cheese ball with walnuts and chives and served up with Ritz crackers ($13).

2. Seafood Tower

If you want to try numerous seafood options, including shrimp cocktails, lobster claws, smoked whitefish dip, cajun smoked salmon and six chefs' choice oysters, this is the way to go ($90).

3. Drinks

There are plenty of drink options, from wine and beer to seafood-friendly cocktails like Frosé (strawberry campari, rosé, $13); the Outlaw Dry Martini (house veggie vodka, vermouth, olives,$13); and the BA Strawberry Negroni (strawberry campari, gin, vermouth, $13).  You can also indulge in ready-to-drink THC-infused drinks and a bevvy of zero proof options.

Don't miss drink specials during happy hour, which takes place from 4 to 5 p.m. or 9 to 10 p.m. Wednesday through Saturday.

4. Lobster Claw Basket

A half-pound of warm, easy-to-crack lobster claws served up with butter. How can you argue? (market price)

5. Lobster Sliders - Main Style

The Maine-style sliders feature lobster and a dill-forward mixture of mayo, celery, chives and dill on a specially made lobster roll from Midwest Sad (market price).

6. Lobster Sliders - Connecticut

Meanwhile, the Connecticut-style sliders are lobster forward served with chives and melted butter the side so that you can apply it to your sandwich as desired (market price).

7. Classic Fish Sandwich

If you like a good fish sandwich, this one should fit the bill. You'll find a bun filled with plenty of hand-breaded pollack, a generous serving of snap pea and broccoli slaw and tartar sauce ($17). 

8. Candy Cigs

Smoking kills. Looking cool doesn't. Lean into the "outlaw" part of the pop-up, grab a free candy cigarette and post a photo to the @OutlawOyster page.

They're not featured here, but you should definitely consider the desserts from Midwest Sad.  That includes options like Strawberry Biscuits Shortcake, Funnel Cake Fries, Sugar Plum Cheesecake and Chocolate Peanut Butter Cheesecake ($9.75-$12).

It's also worthwhile to note that you can purchase a variety of snacks, including things like crackers and tinned fish, along with bottles of wine to take home with you!

Beginning Wednesday, Feb. 12, Outlaw Oyster will be open Wednesday to Friday from 4 to 10 p.m., Saturday from noon to 10 p.m. and Sunday from noon to 8 p.m. Snag happy hour specials on any of those days from 4 to 5 p.m. or 9 to 10 p.m.
